1/2 cup unsalted butter, softened

1/2 cup creamy peanut butter

1/2 cup granulated sugar

1/2 cup packed light brown sugar

1 large egg

1 teaspoon pure vanilla extract

1 1/2 cups all-purpose flour

3/4 teaspoon baking soda

1/2 teaspoon baking powder

Additional granulated sugar for rolling

Instructions

Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper or a silicone baking mat.

In a large mixing bowl, cream together the butter and peanut butter until smooth and fluffy, about 1–2 minutes.

Add the granulated sugar and brown sugar. Beat until light and creamy.

Mix in the egg and vanilla extract until just combined.

In a separate bowl, whisk together flour, baking soda, baking powder, and salt. Gradually add to the peanut butter mixture, stirring until a soft dough forms.

Scoop out 1 tablespoon of dough at a time and roll into small, smooth balls.

Roll each dough ball in granulated sugar to coat evenly.

Place the dough balls about 2 inches apart on the prepared baking sheet.

Bake for 7–8 minutes, or until the edges are lightly golden and the tops begin to crack.

Remove from oven and immediately press a chocolate kiss into the center of each cookie. The edges will crack slightly, giving them their signature look.

Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
