A juicy grilled chicken recipe infused with tropical mango and pineapple flavors, creating a sweet, tangy, and savory dish perfect for warm-weather meals and backyard gatherings.
Ingredients
4 boneless skinless chicken breasts (about 700 g / 1.5 lb)
1 cup mango puree (240 ml)
1 cup pineapple juice (240 ml)
3 tablespoons olive oil (45 ml)
3 tablespoons lime juice (45 ml)
3 cloves garlic, minced
1 tablespoon grated ginger (15 g)
1 tablespoon honey (15 ml)
1 teaspoon paprika (5 g)
1 teaspoon cumin (5 g)
1 teaspoon salt (5 g)
1/2 teaspoon black pepper (2.5 g)
1 ripe mango, diced (150 g / 1 cup)
1 cup pineapple chunks (165 g)
1 tablespoon olive oil (15 ml)
1 tablespoon lime juice (15 ml)
1 tablespoon chopped cilantro (5 g)
Instructions
In a large bowl, whisk together mango puree, pineapple juice, olive oil, lime juice, garlic, ginger, honey, paprika, cumin, salt, and black pepper.
Place the chicken breasts in a large zip-top bag or dish and pour the marinade over them. Marinate in the refrigerator for at least 1 hour or up to 4 hours.
Preheat the grill to medium-high heat (375–400°F / 190–200°C). Lightly oil the grates.
Remove the chicken from the marinade and grill for 6–7 minutes per side until the internal temperature reaches 165°F (74°C).
Toss the mango cubes and pineapple chunks with olive oil and grill them for 2–3 minutes until lightly charred.
Mix the grilled fruit with lime juice and chopped cilantro.
Serve the grilled chicken topped with the mango pineapple mixture.
Notes
For extra flavor, allow the chicken to marinate for several hours.
If grilling is not available, the chicken can be baked or cooked in a grill pan.
Serve with rice, quinoa, or grilled vegetables for a complete meal.
