Ingredients
1 ½ pounds sirloin steak, cut into 1-inch cubes
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon smoked paprika
2 tablespoons olive oil
4 tablespoons unsalted butter
4 cloves garlic, minced
1 tablespoon chopped fresh parsley
12 ounces fettuccine or penne pasta

2 cups heavy cream
1 cup freshly grated Parmesan cheese
½ teaspoon salt
½ teaspoon black pepper
¼ teaspoon Italian seasoning
¼ cup reserved pasta water (if needed)
1 tablespoon chopped parsley for garnish
Instructions
Bring a large pot of salted water to a boil and cook 12 ounces pasta until al dente. Reserve ¼ cup pasta water, then drain.
Season 1 ½ pounds steak cubes with 1 teaspoon salt, ½ teaspoon pepper, and 1 teaspoon smoked paprika.
Heat 2 tablespoons olive oil in a skillet over medium-high heat. Sear steak for 2–3 minutes per side. Remove and set aside.
In the same skillet, melt 4 tablespoons butter. Add 4 cloves minced garlic and cook for 30–60 seconds. Return steak to pan and toss. Sprinkle with parsley.
In another pan, melt 2 tablespoons butter over medium heat. Add 3 cloves minced garlic and sauté briefly.
Stir in 2 cups heavy cream and simmer gently. Add 1 cup Parmesan, ½ teaspoon salt, ½ teaspoon pepper, and ¼ teaspoon Italian seasoning.
Add cooked pasta to sauce and toss. Use reserved pasta water if needed to loosen sauce.
Serve pasta topped with garlic butter steak bites and garnish with parsley.
Notes
Use freshly grated Parmesan for the smoothest sauce.
Avoid overcrowding the pan when searing steak to ensure a proper crust.
Add a splash of cream or milk when reheating leftovers to maintain creaminess.
