Description

A comforting slow cooker chicken dish made with tender chicken breasts simmered in a creamy tomato basil sauce. This easy recipe creates a rich and flavorful meal perfect for serving over pasta, rice, or mashed potatoes.


Ingredients

2 pounds (900 g) boneless skinless chicken breasts
1 tablespoon olive oil
4 cloves garlic, minced
1 small onion, finely chopped
1 can (28 ounces / 800 g) crushed tomatoes
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon paprika
1/2 teaspoon red pepper flakes (optional)
1/2 cup (120 ml) chicken broth
1 cup (240 ml) heavy cream
1/2 cup (50 g) grated Parmesan cheese
1 tablespoon cornstarch
2 tablespoons water
1/4 cup (10 g) fresh basil, chopped


Instructions

Season the chicken breasts with salt and black pepper.

Heat olive oil in a skillet over medium heat. Cook the chopped onion for 3–4 minutes until soft. Add minced garlic and cook for 1 minute.

Place the chicken in the slow cooker and add the onion and garlic mixture on top.

Pour in crushed tomatoes and chicken broth. Add oregano, dried basil, paprika, red pepper flakes, salt, and pepper.

Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours.

Stir in the heavy cream and grated Parmesan cheese during the last 30 minutes of cooking.

Mix cornstarch with water and stir into the slow cooker to thicken the sauce.

Cook for another 20–30 minutes until the sauce thickens.

Add fresh basil before serving and serve with pasta, rice, or mashed potatoes.

Notes

For extra flavor, sauté the onion and garlic before adding them to the slow cooker.
Chicken thighs can be used instead of chicken breasts for a juicier result.
Add mushrooms or spinach for additional vegetables.
If the sauce becomes too thick when reheating, add a small splash of chicken broth or cream.
