Description

A warm and comforting dinner made with tender chicken, buttery egg noodles, and simple seasonings. Perfect for busy weeknights or cozy evenings at home.


Ingredients

12 ounces egg noodles
2 tablespoons olive oil
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1 teaspoon salt, divided
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon paprika
4 tablespoons unsalted butter
3 cloves garlic, minced
1/2 cup low-sodium chicken broth
1/2 cup freshly grated Parmesan cheese
2 tablespoons chopped fresh parsley
Optional: 1/4 teaspoon red pepper flakes


Instructions

Bring a large pot of salted water to a boil. Cook 12 ounces egg noodles according to package instructions until al dente. Reserve 1/2 cup pasta water, then drain.

Heat 2 tablespoons olive oil in a large skillet over medium heat. Season 1 pound chicken with 1/2 teaspoon salt, 1/2 teaspoon black pepper, 1 teaspoon garlic powder, 1 teaspoon onion powder, and 1/2 teaspoon paprika.

Cook chicken for 5–7 minutes until golden and fully cooked. Remove from skillet.

Reduce heat to medium-low. Melt 4 tablespoons unsalted butter in the same skillet. Add 3 cloves minced garlic and sauté for 30 seconds.

Pour in 1/2 cup chicken broth and simmer for 2–3 minutes.

Return chicken to the skillet. Add drained noodles and toss to coat.

Stir in 1/2 cup freshly grated Parmesan cheese and add reserved pasta water as needed for creaminess.

Sprinkle with 2 tablespoons chopped parsley and optional red pepper flakes. Serve warm.

Notes

Use freshly grated Parmesan for best melting results.
Add vegetables such as broccoli or peas for extra nutrition.
Reheat leftovers gently with a splash of broth to maintain moisture.
