Description
A rich and comforting one pot pasta featuring tender penne simmered in a creamy tomato sauce with garlic, herbs, and parmesan for the ultimate cozy meal.
Ingredients
12 ounces (340 g) penne pasta
1 tablespoon (15 ml) olive oil
1 medium yellow onion, finely diced (about 1 cup / 150 g)
3 cloves garlic, minced
2 cups (480 ml) vegetable broth
1 can (15 ounces / 425 g) crushed tomatoes
1 cup (240 ml) heavy cream
1/2 cup (50 g) freshly grated parmesan cheese
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes (optional)
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup (15 g) fresh basil, chopped
Up to 1/2 cup (120 ml) water as needed
Instructions
Heat olive oil in a large pot over medium heat. Sauté diced onion for 4–5 minutes until soft. Add minced garlic and cook 30 seconds.
Stir in vegetable broth and crushed tomatoes. Add uncooked penne, dried basil, oregano, red pepper flakes, salt, and pepper. Bring to a boil.
Reduce heat, cover, and simmer for 12–15 minutes, stirring occasionally, until pasta is tender. Add water if needed.
Lower heat and stir in heavy cream and parmesan cheese until smooth and creamy.
Turn off heat and fold in fresh basil. Serve immediately.
Notes
For extra creaminess, add 2 tablespoons (30 g) cream cheese. Store leftovers in the refrigerator for up to 4 days and reheat with a splash of water or milk to restore texture.
