Ingredients

4 salmon fillets (170 g / 6 oz each)

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon olive oil

60 g (4 tablespoons) unsalted butter

Zest of 1 orange

Zest of 1 lemon

60 ml (¼ cup) fresh orange juice

2 tablespoons fresh lemon juice

1 teaspoon honey

1 garlic clove, minced

1 tablespoon fresh parsley, chopped
Instructions

Pat salmon dry and season with salt and pepper.

Heat olive oil in a skillet over medium-high heat.

Sear salmon for 4–5 minutes per side until crisp and cooked through. Remove and set aside.

Melt butter in the same pan, add garlic, then citrus juices, zests, and honey. Simmer briefly.

Stir in parsley, return salmon to the pan, and spoon sauce over before serving.
