This Crispy Chilli Beef Rice is a perfect combination of crunchy, juicy beef coated in a flavorful chilli sauce, served over fluffy rice. Ingredients

500g beef strips (sirloin or rump)

1/2 cup cornflour

1/4 cup plain flour

1 tsp salt

1/2 tsp black pepper

1/2 tsp garlic powder

1 egg, beaten

2–3 tbsp vegetable oil (for frying)

3 tbsp soy sauce

2 tbsp sweet chili sauce

1 tbsp tomato ketchup

1 tsp sesame oil

1–2 fresh red chillies, sliced

2 cloves garlic, minced

1 tsp ginger, minced

1 tsp cornstarch mixed with 2 tbsp water (slurry)

2 cups jasmine or basmati rice

4 cups water

1 tsp salt

1 tbsp vegetable oil

Optional garnish: sliced spring onions, toasted sesame seeds, fresh coriander
Instructions

Rinse the rice under cold water until clear. Combine rice, water, salt, and oil in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 12–15 minutes. Remove from heat and let sit for 5 minutes. Fluff before serving.

In a bowl, mix cornflour, plain flour, salt, black pepper, garlic powder, and paprika. Dip beef strips in beaten egg, then coat in the flour mixture. Shake off excess.

Heat oil in a large pan or wok over medium-high heat. Fry beef in batches for 3–4 minutes per side until golden and crispy. Drain on paper towels.

In the same pan, sauté garlic, ginger, and chillies for 30 seconds. Add soy sauce, sweet chili sauce, tomato ketchup, and sesame oil. Bring to simmer. Stir in cornstarch slurry and cook until thickened.

Toss fried beef in the sauce until evenly coated. Serve immediately over cooked rice.
