This creamy Tuscan chicken skillet is a comforting one-pan dinner that combines juicy chicken, sun-dried tomatoes, spinach, and Parmesan in a rich, velvety sauce. 4 boneless, skinless chicken breasts (or thighs)

4 cloves garlic, minced

1 cup sun-dried tomatoes, drained and sliced

2 cups fresh spinach leaves

1 cup heavy cream

½ cup chicken broth

½ cup grated Parmesan cheese

1 teaspoon Italian seasoning

½ teaspoon paprika

½ teaspoon red pepper flakes (optional)

Salt and black pepper, to taste

Fresh basil or parsley, chopped (for garnish)
Instructions

at the chicken dry with paper towels. Season both sides with salt, pepper, paprika, and Italian seasoning.

Heat olive oil and butter in a large skillet over medium-high heat. Add the chicken and sear for 5–6 minutes per side until golden brown and almost cooked through. Remove and set aside.

Lower the heat to medium. Add the minced garlic and sauté for about 1 minute until fragrant. Stir in the sun-dried tomatoes and cook briefly.

Pour in the chicken broth to deglaze the pan, scraping up browned bits. Stir in the heavy cream and simmer for 3–4 minutes. Add Parmesan cheese and stir until the sauce thickens. Season with salt, pepper, and red pepper flakes if desired.

Add the spinach and cook until just wilted.

Return the chicken to the skillet, nestling it into the sauce. Simmer on low heat for 5–7 minutes until the chicken is fully cooked through.
