1 cup breadcrumbs (plain or panko)
-
2 tablespoons melted butter
-
1/4 cup grated Parmesan cheese (optional)
-
1 tablespoon chopped parsley for garnish
-
Instructions
-
Bring a large pot of salted water to a boil. Add egg noodles and cook until just al dente. Drain and set aside.
-
In a large skillet, heat olive oil or butter over medium heat. Add chopped onion and cook until translucent, about 3–4 minutes. Stir in minced garlic and cook for another 30 seconds.
-
Add cooked turkey and frozen vegetables to the skillet. Stir and cook for 3–4 minutes until heated through.
-
In a large bowl, whisk together cream of chicken soup, sour cream, milk, garlic powder, onion powder, salt, and pepper. Stir in shredded cheddar cheese until well combined.
-
Add the cooked noodles and turkey mixture to the sauce. Toss gently until evenly coated.
-
Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish and pour the creamy mixture into it, spreading evenly.
-
In a small bowl, combine breadcrumbs, melted butter, and Parmesan cheese. Sprinkle evenly over the casserole.
-
Bake uncovered for 25–30 minutes, or until the topping is golden brown and the casserole is bubbling around the edges.
-
Let rest for 5–10 minutes before serving. Garnish with parsley if desired.
Notes
-
Do not overcook the noodles; they will continue to cook in the oven.
-
For a richer flavor, add 2 oz of cream cheese to the sauce.
-
You can substitute cooked chicken for turkey.
-
Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months.
