Made with tender noodles, juicy turkey, and a luscious creamy sauce, it’s a hearty dish perfect for using up leftover turkey from the holidays. It’s simple, satisfying, and guaranteed to warm hearts around the dinner table.

    • 12 oz egg noodles

    • 3 cups cooked turkey, shredded or cubed

    • 1 tablespoon olive oil or butter

    • 1 small onion, finely chopped

    • 2 cloves garlic, minced

    • 2 cups frozen mixed vegetables (peas, carrots, corn)

    • 2 cans (10.5 oz each) cream of chicken or mushroom soup

    • 1 cup sour cream

    • 1 cup shredded cheddar cheese

    • 1/2 cup milk (whole or 2%)

    • 1 teaspoon salt

    • 1/2 teaspoon black pepper

    • 1 teaspoon garlic powder

    • 1/2 teaspoon onion powder

    Topping

    • 1 cup breadcrumbs (plain or panko)

    • 2 tablespoons melted butter

    • 1/4 cup grated Parmesan cheese (optional)

    • 1 tablespoon chopped parsley for garnish


Instructions

  • Bring a large pot of salted water to a boil. Add egg noodles and cook until just al dente. Drain and set aside.

  • In a large skillet, heat olive oil or butter over medium heat. Add chopped onion and cook until translucent, about 3–4 minutes. Stir in minced garlic and cook for another 30 seconds.

  • Add cooked turkey and frozen vegetables to the skillet. Stir and cook for 3–4 minutes until heated through.

  • In a large bowl, whisk together cream of chicken soup, sour cream, milk, garlic powder, onion powder, salt, and pepper. Stir in shredded cheddar cheese until well combined.

  • Add the cooked noodles and turkey mixture to the sauce. Toss gently until evenly coated.

  • Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish and pour the creamy mixture into it, spreading evenly.

  • In a small bowl, combine breadcrumbs, melted butter, and Parmesan cheese. Sprinkle evenly over the casserole.

  • Bake uncovered for 25–30 minutes, or until the topping is golden brown and the casserole is bubbling around the edges.

  • Let rest for 5–10 minutes before serving. Garnish with parsley if desired.

Notes

  • Do not overcook the noodles; they will continue to cook in the oven.

  • For a richer flavor, add 2 oz of cream cheese to the sauce.

  • You can substitute cooked chicken for turkey.

  • Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months.
