1 lb (450 g) boneless skinless chicken breasts, diced

1 package (9 oz / 250 g) fresh or refrigerated cheese tortellini

3 tbsp unsalted butter

6 garlic cloves, minced

1 small onion, finely chopped

1 tsp red pepper flakes (adjust to taste)

1 tsp Italian seasoning

1 cup (240 ml) chicken broth

1 cup (240 ml) heavy cream

1/2 cup (50 g) grated Parmesan cheese

1/2 tsp salt (adjust to taste)

2 cups baby spinach

2 tbsp chopped fresh parsley
Instructions

Heat olive oil and 1 tablespoon of butter in a deep skillet over medium-high heat. Add chicken, season with salt and pepper, and cook until golden and fully cooked, about 5–7 minutes. Remove from the pan and set aside.

Add the remaining butter to the same pan. Stir in the minced garlic and chopped onion. Cook for 2–3 minutes until soft and fragrant.

Add red pepper flakes and Italian seasoning, stirring to combine.

Pour in the chicken broth and scrape the bottom of the pan to release browned bits. Simmer for 2 minutes.

Reduce heat and add heavy cream. Stir in Parmesan cheese until melted and the sauce becomes creamy.

Add the tortellini to the sauce, ensuring it is fully submerged. Cover and cook for 3–5 minutes, or until the tortellini is tender.
