Description
A luxurious yet simple pasta sauce combining sweet roasted garlic and bright lemon for an elegant meal.
Ingredients
1 whole garlic head
2 tablespoons olive oil (30 ml)
1 cup heavy cream (240 ml)
½ cup grated Parmesan cheese (50 g)
1 tablespoon unsalted butter (15 g)
1 tablespoon fresh lemon juice (15 ml)
1 teaspoon lemon zest (5 g)
½ teaspoon salt (3 g)
¼ teaspoon black pepper (1 g)
¼ teaspoon crushed red pepper flakes (optional, 1 g)
250 g pasta
¼ cup pasta water (60 ml)
2 tablespoons parsley (10 g)
Instructions
Preheat oven to 200°C (400°F). Slice garlic head, drizzle with oil, wrap in foil, and roast for 35–40 minutes.
Cook pasta in salted boiling water and reserve ¼ cup (60 ml) pasta water.
Melt butter in a pan and mash roasted garlic into it.
Add cream and stir until smooth.
Mix in Parmesan cheese until melted.
Add lemon juice, zest, and seasonings.
Toss pasta with sauce and add pasta water as needed.
Garnish with parsley and serve.
Notes
Adjust lemon for more or less tang.
Use fresh Parmesan for best results.
Add vegetables or protein for variation.
