A rich and comforting chicken dish simmered in a creamy basil pesto sauce that’s perfect for both weeknight dinners and special occasions.


Ingredients

  • Chicken breast fillets – 700 g (1.5 lb), sliced

  • Olive oil – 2 tablespoons

  • Garlic cloves – 4 cloves, minced

  • Heavy cream – 240 ml (1 cup)

  • Basil pesto – 120 g (½ cup)

  • Chicken broth – 120 ml (½ cup)

  • Grated Parmesan cheese – 60 g (½ cup)

  • Salt – 1 teaspoon

  • Black pepper – ½ teaspoon

  • Italian seasoning – 1 teaspoon

  • Red pepper flakes – ¼ teaspoon (optional)

  • Fresh basil – for garnish


Instructions

  • Season the chicken with salt, pepper, and Italian seasoning.

  • Heat olive oil in a skillet and sear the chicken until golden and cooked through. Remove and set aside.

  • Sauté garlic in the same skillet until fragrant.

  • Add chicken broth and simmer briefly.

  • Stir in heavy cream and pesto, letting the sauce thicken gently.

  • Add Parmesan cheese and mix until smooth.

  • Return chicken to the skillet and simmer for a few minutes.

  • Garnish with fresh basil and serve warm.
