Ingredients
-
1 lb (450 g) cheese tortellini, fresh or refrigerated
-
1 lb (450 g) steak (sirloin, ribeye, or your favorite cut), cut into bite-sized pieces
-
3 tablespoons olive oil, divided
-
4 cloves garlic, minced
-
1 small onion, finely chopped
-
1 cup heavy cream
-
1/2 cup chicken or vegetable broth
-
1/2 cup grated Parmesan cheese
-
1 teaspoon Italian seasoning
-
1/2 teaspoon crushed red pepper flakes (optional)
-
Salt and black pepper, to taste
-
2 tablespoons unsalted butter
-
1 tablespoon fresh parsley, chopped (for garnish)
-
1 teaspoon fresh thyme leaves (optional)
Instructions
-
Bring a large pot of salted water to a boil and cook tortellini according to package instructions until al dente. Drain and set aside.
-
Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Season steak pieces with salt and pepper. Sear in the skillet for 2–3 minutes per side until golden-brown. Remove and set aside.
-
In the same skillet, add remaining tablespoon of olive oil. Cook onions for 2–3 minutes until translucent, then add garlic and cook 1 more minute until fragrant.
-
Pour in heavy cream and broth, stirring to combine. Bring to a gentle simmer. Add Parmesan cheese, Italian seasoning, and red pepper flakes. Stir until cheese melts and sauce thickens slightly. Season with salt and pepper.
-
Return steak and tortellini to the skillet. Gently toss to coat evenly with the sauce. Add butter and stir until melted and incorporated.
-
Remove from heat. Sprinkle parsley and thyme over the top. Serve immediately.
Notes
-
Use fresh pasta for a softer texture and richer flavor.
-
Adjust garlic and seasoning to taste.
-
Reheat leftovers on the stove with a splash of cream or broth to maintain sauce consistency.
-
Optional vegetables like spinach or mushrooms can be added for extra flavor and nutrients.
