Description

A comforting and indulgent dish perfect for cozy evenings, weekend dinners, or any time you want to turn leftover prime rib into a restaurant-quality meal. This recipe combines tender prime rib with soft gnocchi, all coated in a rich and garlicky cream sauce that will delight the senses and warm the soul.

  • 2 cups cooked prime rib, thinly sliced or shredded

  • 1 pound potato gnocchi (store-bought or homemade)

  • 3 tablespoons unsalted butter

  • 3 tablespoons olive oil

  • 5 cloves garlic, minced

  • 1 small onion, finely chopped

  • 1 cup heavy cream

  • 1/2 cup grated Parmesan cheese

  • 1 teaspoon Dijon mustard

  • 1/2 teaspoon freshly ground black pepper

  • 1/4 teaspoon salt, adjust to taste

  • 1/4 teaspoon crushed red pepper flakes (optional)

  • 1/4 cup chopped fresh parsley, for garnish


Instructions

  • Bring a large pot of salted water to a boil. Cook the gnocchi according to package instructions or until they float to the surface. Drain and set aside.

  • In a large skillet, heat the butter and olive oil over medium heat. Add the chopped onion and sauté until soft and translucent, about 4–5 minutes. Stir in the minced garlic and cook for another 1–2 minutes until fragrant.

  • Reduce heat to low and pour in the heavy cream. Stir in the Parmesan cheese and Dijon mustard. Allow the sauce to gently simmer for 3–4 minutes, stirring occasionally, until it thickens slightly. Season with salt, black pepper, and red pepper flakes, if using.

  • Add the cooked prime rib and gnocchi to the skillet. Gently toss to coat the gnocchi and beef evenly in the creamy garlic sauce. Heat for 2–3 minutes until everything is warmed through.

  • Transfer the creamy prime rib gnocchi to serving plates. Sprinkle generously with fresh parsley. Optionally, add extra Parmesan cheese.

  • Serve immediately while warm. Pair with a simple green salad or roasted vegetables for a complete meal.

Notes

 

  • Leftover prime rib works perfectly for this recipe.

  • For an extra crisp exterior, lightly pan-fry cooked gnocchi in butter before adding the sauce.

  • Parmesan can be substituted with Pecorino Romano for a sharper flavor.

  • Add vegetables like mushrooms, spinach, or roasted cherry tomatoes for extra nutrition and color.

  • Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat gently on the stovetop.
