Ingredients

  • Boneless, skinless chicken breasts – 2 pounds (900 g)

  • Olive oil – 2 tablespoons

  • Garlic cloves, minced – 5 cloves

  • Sun-dried tomatoes, chopped – 1 cup (150 g)

  • Chicken broth – 1 cup (240 ml)

  • Heavy cream – 1 cup (240 ml)

  • Cream cheese, softened – 4 ounces (115 g)

  • Grated Parmesan cheese – ¾ cup (75 g)

  • Italian seasoning – 2 teaspoons

  • Paprika – 1 teaspoon

  • Red pepper flakes – ½ teaspoon (optional)

  • Salt – 1 teaspoon

  • Black pepper – ½ teaspoon

  • Cornstarch – 1 tablespoon

  • Cold water – 2 tablespoons

  • Fresh basil or parsley, chopped – ¼ cup


Instructions

  • Season chicken with salt, pepper, and paprika.

  • Sear chicken in olive oil for 2 minutes per side.

  • Place chicken in the crock pot.

  • Add garlic, sun-dried tomatoes, broth, and cream.

  • Sprinkle Italian seasoning and red pepper flakes.

  • Cook on low for 4–5 hours or high for 2–3 hours.

  • Add cream cheese and Parmesan 30 minutes before serving.

  • Stir in cornstarch slurry and cook until thickened.
