Description

A creamy, refreshing pasta salad made with tender bow tie pasta, crisp vegetables, and a smooth, flavorful dressing. Perfect for gatherings, meal prep, or an easy lunch.


Ingredients

  • 12 ounces (340 g) bow tie pasta

  • 1 cup (240 g) mayonnaise

  • 1/2 cup (120 g) sour cream

  • 1 tablespoon lemon juice

  • 1 teaspoon apple cider vinegar

  • 1 teaspoon Dijon-style mustard

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1 cup (150 g) cherry tomatoes, halved

  • 1 cup (130 g) cucumber, diced

  • 1/2 cup (75 g) red bell pepper, finely chopped

  • 1/3 cup (50 g) red onion, finely diced

  • 1/4 cup (15 g) fresh parsley, chopped


Instructions

  • Cook the bow tie pasta in salted boiling water until al dente. Drain and rinse under cold water.

  • In a large bowl, whisk together mayonnaise, sour cream, lemon juice, apple cider vinegar, and mustard.

  • Add salt, black pepper, garlic powder, and onion powder. Mix until smooth.

  • Add cooled pasta to the dressing and toss to coat evenly.

  • Fold in tomatoes, cucumber, red bell pepper, red onion, and parsley.

  • Refrigerate for at least 30 minutes before serving. Stir gently and adjust seasoning if needed.

Notes

  • Chill before serving for best flavor.

  • Stir in a small amount of milk if the salad becomes too thick after refrigeration.

  • Best enjoyed within two to three days when stored properly in the refrigerator.
