Description

This creamy baked feta pasta is a comforting, oven-roasted dish that transforms simple ingredients into a rich and satisfying weeknight meal.


Ingredients

  • Pasta (penne or fusilli): 400 g (14 oz)

  • Feta cheese block: 200 g (7 oz)

  • Cherry tomatoes: 500 g (1 lb)

  • Olive oil: 4 tablespoons

  • Garlic cloves, crushed: 4 cloves

  • Dried oregano: 1 teaspoon

  • Dried basil: 1 teaspoon

  • Red pepper flakes (optional): ½ teaspoon

  • Salt: ½ teaspoon

  • Black pepper: ½ teaspoon

  • Fresh basil, chopped: ¼ cup

  • Reserved pasta water: ½ cup


Instructions

  • Preheat oven to 200°C (400°F).

  • Place feta in the center of a baking dish and surround with tomatoes.

  • Drizzle with olive oil and add garlic, oregano, basil, red pepper flakes, salt, and pepper.

  • Bake for 30–35 minutes until tomatoes burst and feta softens.

  • Cook pasta in salted water until al dente; reserve ½ cup of pasta water.

  • Mash baked feta and tomatoes into a creamy sauce.

  • Add pasta and reserved water as needed, tossing to coat evenly.

  • Finish with fresh basil and serve warm.

Notes

  • Adjust seasoning after mixing, as feta varies in saltiness.

  • Add vegetables like spinach or zucchini for extra texture and nutrition.

  • Best served fresh, but leftovers can be gently reheated with a splash of water.
