Ingredients

Pasta (penne or fusilli): 400 g (14 oz)

Feta cheese block: 200 g (7 oz)

Cherry tomatoes: 500 g (1 lb)

Olive oil: 4 tablespoons

Garlic cloves, crushed: 4 cloves

Dried oregano: 1 teaspoon

Dried basil: 1 teaspoon

Red pepper flakes (optional): ½ teaspoon

Salt: ½ teaspoon

Black pepper: ½ teaspoon

Fresh basil, chopped: ¼ cup

Reserved pasta water: ½ cup
Instructions

Preheat oven to 200°C (400°F).

Place feta in the center of a baking dish and surround with tomatoes.

Drizzle with olive oil and add garlic, oregano, basil, red pepper flakes, salt, and pepper.

Bake for 30–35 minutes until tomatoes burst and feta softens.

Cook pasta in salted water until al dente; reserve ½ cup of pasta water.

Mash baked feta and tomatoes into a creamy sauce.

Add pasta and reserved water as needed, tossing to coat evenly.

Finish with fresh basil and serve warm.
