Description
A creamy, fresh pasta salad inspired by classic Caprese flavors and tossed in a rich pesto dressing.
Ingredients

12 oz (340 g) short pasta such as fusilli or penne

1 1/2 cups (225 g) cherry tomatoes, halved

8 oz (225 g) fresh mozzarella pearls or cubed mozzarella

1/3 cup (15 g) fresh basil leaves, torn

1/2 cup (120 g) basil pesto

1/2 cup (120 g) mayonnaise

1/4 cup (60 ml) heavy cream

1 tablespoon (15 ml) fresh lemon juice

1/4 teaspoon salt

1/4 teaspoon black pepper
Instructions

Cook the pasta in salted water until al dente, then drain and cool completely.

In a bowl, whisk together pesto, mayonnaise, heavy cream, lemon juice, salt, and black pepper.

Combine pasta, tomatoes, mozzarella, and basil in a large bowl.

Pour dressing over the salad and toss gently until well coated.

Refrigerate for at least 30 minutes before serving.
