Description

A creamy, fresh pasta salad inspired by classic Caprese flavors and tossed in a rich pesto dressing.


Ingredients

Scale
  • 12 oz (340 g) short pasta such as fusilli or penne

  • 1 1/2 cups (225 g) cherry tomatoes, halved

  • 8 oz (225 g) fresh mozzarella pearls or cubed mozzarella

  • 1/3 cup (15 g) fresh basil leaves, torn

  • 1/2 cup (120 g) basil pesto

  • 1/2 cup (120 g) mayonnaise

  • 1/4 cup (60 ml) heavy cream

  • 1 tablespoon (15 ml) fresh lemon juice

  • 1/4 teaspoon salt

  • 1/4 teaspoon black pepper


Instructions

  • Cook the pasta in salted water until al dente, then drain and cool completely.

  • In a bowl, whisk together pesto, mayonnaise, heavy cream, lemon juice, salt, and black pepper.

  • Combine pasta, tomatoes, mozzarella, and basil in a large bowl.

  • Pour dressing over the salad and toss gently until well coated.

  • Refrigerate for at least 30 minutes before serving.

Notes

For best flavor, use high-quality pesto and allow the salad to chill before serving. Refresh with a small splash of cream if needed after refrigeration.
