Description

The Cranberry Walnut Spinach Salad is a vibrant and flavorful dish perfect for autumn gatherings, cozy dinners, or any time you want a fresh, nutritious meal. With tender baby spinach, sweet-tart cranberries, crisp apples, and crunchy toasted walnuts, this salad combines textures and flavors that delight the senses. The creamy feta cheese adds a subtle tang, tying all the ingredients together. Inspired by seasonal produce and classic holiday flavors, this salad is easy to prepare, visually appealing, and versatile enough to serve as a side dish or a light main course. Its mix of colors, crunch, and taste makes it a favorite for both everyday meals and special occasions.

Ingredients

Scale
  • 6 cups fresh baby spinach, washed and dried

  • 1 cup dried cranberries

  • 1 cup toasted walnuts

  • ½ cup crumbled feta cheese

  • 1 small red onion, thinly sliced

  • 1 apple, thinly sliced

  • ½ cup balsamic vinaigrette (or preferred salad dressing)

  • Salt and black pepper to taste

Instructions

  • Prepare the Ingredients
Wash and dry the baby spinach thoroughly. Thinly slice the red onion and apple, setting them aside. Toast the walnuts in a dry skillet over medium heat for 3–5 minutes, stirring frequently until golden and fragrant. Allow the walnuts to cool slightly before adding them to the salad.

  • Combine the Salad Base
In a large salad bowl, combine the baby spinach, sliced apple, and red onion. Sprinkle the dried cranberries evenly over the top.

  • Add the Walnuts and Cheese
Once the walnuts have cooled, scatter them over the salad along with the crumbled feta cheese.

  • Dress the Salad
Drizzle the vinaigrette evenly over the salad. Gently toss the ingredients using salad tongs or clean hands to ensure each bite has dressing. Avoid over-tossing to keep the spinach leaves intact.

  • Season to Taste
Lightly season with salt and freshly ground black pepper. Taste and adjust the seasoning as needed.

  • Serve Immediately
Serve the salad immediately for the best texture and flavor. It pairs well with roasted chicken, grilled vegetables, or on its own as a refreshing meal.

Notes

  • Use fresh, crisp spinach to ensure the best texture.

  • Toast the walnuts just before serving to maximize flavor and crunch.

  • Coat apple slices with a little lemon juice to prevent browning.

  • Adjust dressing and seasoning according to taste preferences.
