Description

These Cranberry Brie Bites are the perfect holiday appetizer—flaky puff pastry filled with creamy brie and sweet-tart cranberry sauce. Easy to make and elegant to serve, they’re ideal for festive gatherings, brunches, or cozy evenings at home. Each bite combines buttery pastry, melty cheese, and a hint of fruitiness for a crowd-pleasing treat that looks as good as it tastes.

Ingredients

Scale
  • 1 sheet puff pastry (thawed if frozen)

  • 8 ounces brie cheese

  • 1/2 cup cranberry sauce

  • 1 tablespoon honey

  • 1/4 cup chopped pecans or walnuts (optional)

  • Fresh thyme leaves (optional)

  • 1 egg (beaten, for egg wash)

Instructions

  • Preheat your oven to 375°F (190°C). Unfold the puff pastry on a lightly floured surface and roll slightly to smooth creases. Cut into 12 equal squares.

  • Cut the brie into 12 cubes, about 1 inch each. Remove rind if desired.

  • Place a brie cube in the center of each pastry square. Top with a teaspoon of cranberry sauce and sprinkle with nuts if using.

  • Bring the corners of each square toward the center, leaving some topping visible. Brush edges with beaten egg to seal.

  • Place on a parchment-lined baking sheet and bake for 15-18 minutes until golden brown and puffed. Watch closely to avoid over-browning.

  • Remove from oven and let cool 2-3 minutes. Drizzle with honey and garnish with fresh thyme leaves. Serve warm.

Notes

  • Assemble ahead and refrigerate up to 24 hours, bake just before serving.

  • Customize toppings with fig jam, apricot preserves, or pomegranate seeds.

  • For a nut-free version, omit the nuts.

  • Use high-quality brie for best flavor and melting texture.

  • Leftovers can be stored in the fridge for 2 days and reheated in the oven at 350°F (175°C) for 5-7 minutes.
