Ingredients
-
12 ounces (340 g) penne pasta
-
2 large boneless, skinless chicken breasts (about 1 pound / 450 g), cut into bite-sized pieces
-
2 tablespoons (30 ml) olive oil
-
1 tablespoon (14 g) butter
-
3 cloves garlic, minced (about 1 tablespoon)
-
1 cup (240 ml) chicken broth
-
8 ounces (225 g) cream cheese, softened and cubed
-
1 cup (100 g) shredded cheddar cheese
-
1 cup (100 g) shredded mozzarella cheese
-
1 tablespoon (10 g) ranch-style seasoning mix
-
1 teaspoon (2 g) onion powder
-
1 teaspoon (2 g) garlic powder
-
1/2 teaspoon (1 g) black pepper
-
1/2 teaspoon (1 g) paprika
Instructions
-
Cook the penne pasta according to package instructions until al dente. Drain and set aside.
-
In a large skillet, heat the olive oil and butter over medium-high heat. Add the chicken pieces and season with onion powder, garlic powder, black pepper, and paprika. Cook until golden brown and cooked through, about 6–8 minutes.
-
Reduce heat to medium, add minced garlic, and sauté for 1 minute until fragrant.
-
Pour in the chicken broth, scraping the bottom of the skillet to release any browned bits.
-
Add the cubed cream cheese and stir until melted and smooth.
-
Stir in the ranch seasoning, shredded cheddar, and mozzarella cheese until the sauce is creamy and well combined.
-
Add the cooked penne to the skillet, tossing until the pasta is fully coated with the sauce.
-
Simmer for 2–3 minutes, stirring occasionally, to allow flavors to meld.
-
Taste and adjust seasoning if needed. Serve hot, optionally garnished with extra cheese or parsley.
Notes
-
Add cooked broccoli, spinach, or sun-dried tomatoes for extra flavor and nutrition.
-
Store leftovers in the refrigerator for up to 3 days; reheat with a splash of chicken broth to restore creaminess.
-
Using a combination of cheddar and mozzarella ensures the sauce is rich, cheesy, and perfectly melty.
-
For a spicier version, add crushed red pepper flakes while cooking the chicken.
