Description

A warming and nourishing soup made with tender chicken, aromatic ginger and garlic, and comforting noodles in a flavorful broth.


Ingredients

Scale
  • 1 tablespoon olive oil

  • 1 medium onion, finely chopped

  • 3 medium carrots, sliced

  • 2 celery stalks, sliced

  • 1 tablespoon fresh ginger, grated

  • 5 cloves garlic, minced

  • 8 cups chicken broth

  • 1 pound chicken breast or chicken thighs, boneless and skinless

  • 1 teaspoon salt

  • ½ teaspoon ground black pepper

  • ½ teaspoon turmeric powder

  • ½ teaspoon dried thyme

  • 2 cups egg noodles or wheat noodles

  • 2 tablespoons fresh lemon juice

  • 2 tablespoons fresh parsley, chopped


Instructions

  • Heat olive oil in a large pot over medium heat and sauté onion until soft.

  • Add carrots and celery and cook for a few minutes.

  • Stir in ginger and garlic and cook until fragrant.

  • Pour in chicken broth and add chicken, salt, pepper, turmeric, and thyme.

  • Simmer until chicken is cooked, then shred and return to pot.

  • Add noodles and cook until tender.

  • Stir in lemon juice and parsley before serving.

Notes

For best texture, add noodles just before serving if storing leftovers. Adjust seasoning to taste and add extra ginger or garlic for a stronger flavor.
