Ingredients
For the Cowboy Butter Steak:

2 ribeye or sirloin steaks (about 1 inch thick)

1 tablespoon olive oil

4 tablespoons unsalted butter

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon chili powder

1 teaspoon dried thyme or 1 tablespoon fresh thyme

1 teaspoon dried rosemary or 1 tablespoon fresh rosemary, chopped

1/2 teaspoon onion powder

1/4 teaspoon cayenne pepper (optional)

1 teaspoon lemon juice

2 tablespoons chopped fresh parsley
For the Mashed Potatoes:

2 pounds russet or Yukon gold potatoes, peeled and cut into chunks

4 tablespoons unsalted butter

1/2 cup whole milk (adjust as needed)

1/4 cup sour cream (optional)

Salt and freshly ground black pepper, to taste

1–2 cloves garlic, roasted or minced (optional)
Instructions

Place potato chunks in a large pot and cover with cold water. Add a pinch of salt.

Bring to a boil, then reduce to a simmer and cook until tender, about 15-20 minutes.

Drain potatoes and return to the pot. Add butter, milk, and sour cream. Mash until smooth and creamy. Season with salt and pepper.

Pat steaks dry and season both sides with salt and pepper.

Heat a cast-iron skillet over medium-high heat. Add olive oil.

Cook steaks 4-5 minutes per side for medium-rare, adjusting for thickness.

While steaks cook, melt butter in a small saucepan. Add garlic, smoked paprika, chili powder, thyme, rosemary, onion powder, cayenne pepper, and lemon juice. Stir for 2-3 minutes, then remove from heat and stir in parsley.
