Ingredients
12 oz linguine pasta
1 lb steak (sirloin or ribeye), cut into bite-sized cubes
2 cups carrots, sliced into thin sticks
3 tbsp butter
2 tbsp olive oil
4 cloves garlic, minced
½ cup chicken or beef broth
½ cup grated parmesan cheese
1 tsp smoked paprika
Salt and black pepper, to taste
Optional garnish: chopped parsley or red pepper flakes
Instructions

Roast the Carrots
Preheat oven to 425°F (220°C). Toss carrot sticks with 1 tbsp olive oil, salt, and pepper. Spread evenly on a baking sheet and roast for 15–20 minutes until tender and slightly caramelized. -
Cook the Linguine
Bring a large pot of salted water to a boil. Cook linguine according to package instructions until al dente. Drain and set aside, reserving a small cup of pasta water if needed for the sauce. -
Sear the Steak
Season steak bites with salt, pepper, and smoked paprika. Heat remaining olive oil in a large skillet over medium-high heat. Sear steak bites 3–5 minutes until browned and cooked to desired doneness. Remove and set aside. -
Make the Cowboy Butter Sauce
In the same skillet, melt butter over medium heat. Sauté garlic for 30 seconds until fragrant. Pour in broth and add parmesan cheese, stirring until smooth and creamy. Adjust seasoning as needed. -
Combine Everything
Return steak and roasted carrots to the skillet. Add linguine and toss gently to coat in the sauce. Add reserved pasta water if needed to adjust consistency. -
Serve & Garnish
Plate hot and garnish with chopped parsley or red pepper flakes. Serve with a side salad or crusty bread if desired.
