This Cowboy Butter Steak & Broccoli Linguine is a bold and flavorful pasta dish that balances tender steak bites with crisp broccoli and a garlicky, lemon-herb butter sauce. Ingredients
For the Steak:

1 lb sirloin or ribeye steak, cut into bite-sized cubes

1 tsp smoked paprika

½ tsp garlic powder

½ tsp black pepper

2 tbsp olive oil
For the Cowboy Butter Sauce:

6 tbsp unsalted butter

4 cloves garlic, minced

½ tsp crushed red pepper flakes (optional)

1 tsp Dijon mustard

Juice of 1 lemon

2 tbsp fresh parsley, chopped

1 tbsp fresh chives, chopped

Salt & black pepper, to taste
For the Pasta:

12 oz linguine
-
3 cups broccoli florets
-
½ cup reserved pasta water
-
½ cup grated Parmesan cheese (plus extra for serving)
Instructions

Cook the Pasta & Broccoli
Bring a large pot of salted water to a rolling boil. Add linguine and cook according to package directions until al dente. Three minutes before the pasta finishes, add the broccoli florets. Reserve ½ cup of the pasta water before draining. Drain pasta and broccoli and set aside. -
Season & Cook the Steak
Toss steak cubes with smoked paprika, garlic powder, black pepper, and a pinch of salt. Heat olive oil in a large skillet over medium-high heat. Add steak cubes in a single layer and sear 2–3 minutes per side until browned and cooked to your liking. Remove from skillet and set aside. -
Make the Cowboy Butter Sauce
Reduce heat to medium and melt butter in the same skillet. Add minced garlic and sauté for about 1 minute until fragrant. Stir in crushed red pepper flakes, Dijon mustard, and lemon juice. Add parsley and chives, then season with salt and black pepper. -
Combine Everything
Add cooked linguine and broccoli to the skillet with the sauce. Toss gently, adding reserved pasta water as needed to reach a creamy consistency. Return steak to the skillet and stir in Parmesan until the sauce is smooth and coats everything evenly. -
Serve & Garnish
Plate the pasta in bowls or on a serving platter. Top with extra Parmesan, parsley, or a pinch of chili flakes. Serve immediately with crusty bread or a simple salad.
