Ingredients
For the Chicken:

2 boneless, skinless chicken breasts, cubed

Salt & black pepper, to taste

1 tbsp olive oil
For the Pasta:

12 oz linguine pasta
For the Cowboy Butter Sauce:

½ cup unsalted butter (1 stick)

4 cloves garlic, minced

1 tsp Dijon mustard

1 tsp Cajun seasoning

¼ tsp red pepper flakes (optional)

Juice and zest of 1 lemon

2 tbsp fresh parsley, chopped

½ cup grated Parmesan cheese
Instructions

Cook the linguine in salted boiling water until al dente. Drain and set aside, reserving ½ cup pasta water.

Season chicken with garlic powder, smoked paprika, salt, and pepper. Heat olive oil in a skillet over medium-high heat and cook chicken until golden brown and cooked through, about 6–8 minutes. Remove and set aside.

In the same skillet, melt butter and sauté garlic until fragrant, about 30 seconds. Stir in Dijon mustard, Cajun seasoning, red pepper flakes, lemon juice, and zest. Simmer 1–2 minutes.

Return cooked linguine and chicken to the skillet. Toss to coat in the sauce. Add reserved pasta water if needed for creaminess. Stir in Parmesan cheese and parsley.
