Ingredients

1 lb boneless, skinless chicken breasts, cut into bite-sized strips
Salt & black pepper, to taste
1 tsp garlic powder
8 oz linguine pasta
2 tbsp olive oil
3 tbsp unsalted butter (for cowboy butter)
3 cloves garlic, minced
1 tsp smoked paprika
½ tsp chili flakes (optional, for heat)
1 tsp dried Italian herbs (or 1 tbsp fresh, chopped)
1 cup heavy cream
½ cup grated Parmesan cheese
1 tbsp fresh parsley, chopped (plus more for garnish)
Juice of ½ lemon


Instructions

  • Cook the Linguine
    Bring a large pot of salted water to a boil. Add the linguine and cook according to the package instructions until al dente. Drain and set aside. Reserve a small cup of pasta water to adjust the sauce if needed.

  • Cook the Chicken
    Season chicken strips with salt, pepper, and garlic powder. Heat olive oil in a large skillet over medium-high heat. Cook chicken for 3–4 minutes per side until golden and cooked through. Remove and set aside.

  • Make the Cowboy Butter Alfredo Sauce
    In the same skillet, melt butter over medium heat. Add minced garlic, smoked paprika, chili flakes (if using), and Italian herbs. Cook for 30 seconds until fragrant.

  • Add Cream and Cheese
    Slowly pour in the heavy cream while stirring. Add Parmesan cheese and stir until the sauce thickens and is smooth. Squeeze in lemon juice for a bright finish.

  • Combine Everything
    Return chicken to the skillet, then add cooked linguine. Toss gently until pasta and chicken are fully coated in the creamy sauce. Add reserved pasta water if needed for consistency.

  • Serve
    Divide among plates and garnish with chopped parsley and extra Parmesan if desired. Serve hot with a side salad, garlic bread, or roasted vegetables.
