A quick and creamy chicken dish with coconut flavors served over fluffy rice, perfect for a satisfying meal in just 30 minutes.
Ingredients
500 g boneless, skinless chicken breast, cut into pieces
1 tablespoon olive oil
3 cloves garlic, minced
1 teaspoon fresh ginger, grated
1 teaspoon ground turmeric
1 teaspoon paprika
1/2 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
400 ml coconut milk
1 tablespoon soy sauce
1 tablespoon lemon juice
1 cup (200 g) jasmine rice
2 cups (480 ml) water
1/2 teaspoon salt
Instructions
Rinse rice and cook with water and salt for 15 minutes, then let rest and fluff.
Heat olive oil and cook chicken until golden, then remove.
Sauté garlic and ginger, then add spices.
Pour in coconut milk and soy sauce, simmer for 5 minutes.
Return chicken to pan and cook for another 5 minutes.
Add lemon juice and mix well.
Serve over rice and add desired toppings.
Notes
Use full-fat coconut milk for best results.
Adjust spices to your taste preference.
Add vegetables for extra nutrition and texture.
