Ingredients
-
1 cup pumpkin puree (fresh or canned)
-
1 cup dark chocolate, chopped or chocolate chips
-
1/2 cup granulated sugar
-
1 teaspoon vanilla extract
-
1 teaspoon ground cinnamon
-
1/2 teaspoon ground nutmeg
-
1/4 teaspoon ground ginger
-
1/4 teaspoon salt
-
1 1/2 cups heavy cream, divided
-
Optional: chocolate shavings or pumpkin seeds for garnish
Instructions
-
In a heatproof bowl, melt the dark chocolate over a pot of simmering water (double boiler method), stirring occasionally until smooth. Remove from heat and set aside to cool slightly.
-
In a medium bowl, combine the pumpkin puree, granulated sugar, vanilla extract, cinnamon, nutmeg, ginger, and salt. Stir until smooth and well blended.
-
In a separate large bowl, whip 1 cup of the heavy cream until soft peaks form.
-
Gently fold the melted chocolate into the pumpkin mixture, being careful not to overmix.
-
Fold the whipped cream into the chocolate-pumpkin mixture in two additions using a spatula and gentle folding motion.
-
Divide the mousse evenly into serving glasses or bowls. Refrigerate for at least 2 hours, or until firm.
-
Just before serving, garnish with chocolate shavings, a sprinkle of cinnamon, or roasted pumpkin seeds if desired.
-
Serve chilled and enjoy.
Notes
-
For best flavor, use homemade pumpkin puree from roasted sugar pumpkins.
-
Choose high-quality dark chocolate with at least 60% cocoa content.
-
This mousse can be prepared a day in advance; store in the refrigerator in airtight containers and add garnishes just before serving.
-
For a lighter mousse, fold in an additional 1/2 cup of whipped cream. For a richer mousse, add a small amount of cream directly to the melted chocolate before combining with pumpkin.
-
Pair with gingersnap cookies, shortbread, or layer with crumbled graham crackers for a festive parfait.
