4 medium sweet potatoes

2 cups leftover prime rib, diced

1 ½ cups shredded sharp cheddar cheese

½ cup sour cream

¼ cup unsalted butter, softened

2 green onions, thinly sliced

1 teaspoon garlic powder

½ teaspoon smoked paprika

Salt and pepper, to taste

Olive oil, for brushing

Instructions

Preheat the oven to 400°F (200°C). Wash and pat dry the sweet potatoes.

Pierce each sweet potato several times with a fork. Brush with olive oil and sprinkle with a pinch of salt.

Place sweet potatoes on a baking sheet lined with parchment paper or foil. Bake for 45–60 minutes until tender.

Dice the leftover prime rib into bite-sized pieces. In a bowl, mix with garlic powder, smoked paprika, salt, and pepper. Set aside.
