  • 1 (30 oz) bag frozen shredded hash browns, thawed

  • 2 cups shredded sharp cheddar cheese (divided)

  • 1 cup sour cream

  • 1 can (10.5 oz) cream of chicken or cream of mushroom soup

  • 1 small onion, finely chopped

  • ½ cup melted butter

  • ½ cup milk

  • 1 tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp salt (or to taste)

  • ½ tsp black pepper

  • 1 cup crushed cornflakes or breadcrumbs (optional for topping)

  • 2 tbsp melted butter (for topping, optional)


Instructions

  • Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.

  • In a large bowl, whisk together sour cream, cream of chicken (or mushroom) soup, melted butter, milk, onion, garlic powder, onion powder, salt, and black pepper until smooth.

  • Add thawed hash browns and 1½ cups of shredded cheddar cheese. Stir until evenly coated.

  • Spread the mixture evenly into the prepared baking dish.

  • Sprinkle the remaining ½ cup of cheese over the top.

  • For an optional crunchy topping, mix crushed cornflakes or breadcrumbs with 2 tablespoons melted butter and sprinkle over the casserole.

  • Bake uncovered for 45–55 minutes or until the top is golden brown and the edges are bubbling.

  • Remove from oven and let it rest for 10 minutes before serving to help it set.

Notes

  • Thaw the hash browns completely and pat dry before mixing to prevent excess moisture.
