Instructions

  • Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.

  • Peel and slice the sweet potatoes into thin, even rounds.

  • In a medium saucepan over medium heat, melt butter and sauté garlic for 1–2 minutes until fragrant.

  • Whisk in heavy cream and milk, then add salt, black pepper, smoked paprika, and nutmeg. Stir until smooth and slightly thickened. Remove from heat.

  • Layer sweet potatoes and cheeses in the baking dish, alternating layers and finishing with cheese on top.

  • Sprinkle grated Parmesan and thyme over the top layer.

  • Gently pour the garlic cream sauce over the layers, ensuring it covers evenly.

  • Cover the dish with foil and bake for 35 minutes. Remove foil and bake for an additional 20–25 minutes until golden and tender.

  • Let rest for 5–10 minutes, then garnish with parsley and serve warm.
