4 medium sweet potatoes, peeled and thinly sliced

2 tablespoons olive oil
-
3 cloves garlic, minced
-
1 cup shredded cheddar cheese
-
1 cup shredded mozzarella cheese
-
1/2 cup grated Parmesan cheese

1/2 cup heavy cream
-
1/2 cup milk
-
2 tablespoons unsalted butter
-
1 teaspoon salt
-
1/2 teaspoon black pepper
-
1/2 teaspoon smoked paprika
-
1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
-
1/4 teaspoon nutmeg (optional)
-
2 tablespoons chopped fresh parsley for garnish
Instructions
-
Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
-
Peel and slice the sweet potatoes into thin, even rounds.
-
In a medium saucepan over medium heat, melt butter and sauté garlic for 1–2 minutes until fragrant.
-
Whisk in heavy cream and milk, then add salt, black pepper, smoked paprika, and nutmeg. Stir until smooth and slightly thickened. Remove from heat.
-
Layer sweet potatoes and cheeses in the baking dish, alternating layers and finishing with cheese on top.
-
Sprinkle grated Parmesan and thyme over the top layer.
-
Gently pour the garlic cream sauce over the layers, ensuring it covers evenly.
-
Cover the dish with foil and bake for 35 minutes. Remove foil and bake for an additional 20–25 minutes until golden and tender.
-
Let rest for 5–10 minutes, then garnish with parsley and serve warm.
Notes
-
Use a mandoline slicer for even sweet potato slices to ensure uniform cooking.
-
Mix different cheeses for a balance of creamy and sharp flavors.
-
The cream sauce keeps the bake moist; don’t skip it.
-
Assemble ahead of time and refrigerate for up to 24 hours before baking.
-
Optional add-ins: caramelized onions, roasted peppers, or toasted nuts for extra texture.
