A comforting, cheesy twist on a classic meatloaf, packed with garlic flavor and finished with a golden cheese topping.
Ingredients

Ground beef (900 g / 2 lb)

Garlic cloves, minced (5)

Grated Parmesan cheese (100 g / 1 cup)

Shredded mozzarella cheese (200 g / 2 cups)

Breadcrumbs (120 g / 1 cup)

Milk (120 ml / ½ cup)

Eggs (2 large)

Onion, finely chopped (1 medium)

Salt (1½ tsp)

Black pepper (1 tsp)

Italian seasoning (1 tbsp)

Ketchup (120 ml / ½ cup)

Olive oil (1 tbsp)
Instructions

Preheat oven to 180°C / 350°F.

Sauté onion in olive oil until soft, add garlic briefly, then cool.

Combine all ingredients except half the mozzarella and ketchup.

Shape into a loaf and place in pan.

Spread ketchup on top and bake for 45 minutes.

Add remaining mozzarella and bake 10–15 minutes more.

Rest before slicing.
Notes
Let the meatloaf rest before slicing for best texture. Leftovers store well in the refrigerator for up to four days or can be frozen for later use.
