A comforting, oven-baked chicken meatloaf filled with garlic, parmesan, and melted cheese for a rich yet balanced family meal.


Ingredients

  • Ground chicken – 2 lb (900 g)

  • Grated parmesan cheese – 1 1/2 cups (150 g)

  • Shredded mozzarella cheese – 1 1/2 cups (170 g)

  • Breadcrumbs – 1 cup (60 g)

  • Milk – 3/4 cup (180 ml)

  • Eggs – 2 large

  • Garlic, minced – 5 cloves

  • Onion, finely diced – 1 medium (150 g)

  • Fresh parsley, chopped – 1/4 cup (15 g)

  • Salt – 1 1/2 teaspoons

  • Black pepper – 1 teaspoon

  • Italian seasoning – 1 1/2 teaspoons

  • Olive oil – 2 tablespoons


Instructions

  • Preheat oven to 375°F (190°C).

  • Sauté onion in olive oil for 4–5 minutes, add garlic for 30 seconds, then cool.

  • Combine all ingredients in a large bowl and mix gently.

  • Shape into a loaf and place in a prepared pan.

  • Bake for 50–60 minutes until internal temperature reaches 165°F (74°C).

  • Rest for 10 minutes before slicing.
