A warm, melty, customizable breakfast that transforms simple English muffins into mini pizzas loaded with eggs, cheese, and flavorful toppings.
Ingredients

4 English muffins, split

1 tablespoon olive oil

1 cup shredded mozzarella cheese

½ cup shredded cheddar cheese

6 large eggs

3 tablespoons milk

½ teaspoon salt

¼ teaspoon black pepper

1 tablespoon butter

1 cup diced turkey sausage or turkey bacon

½ cup diced bell peppers
-
½ cup chopped spinach

¼ cup diced red onion

½ cup sliced mushrooms

1 teaspoon dried oregano
Instructions

Preheat oven to 400°F. Arrange English muffins on a baking sheet, brush with olive oil, and toast for 5 minutes.

Whisk eggs, milk, salt, and pepper. Scramble in a buttered pan until just set.

Spoon eggs onto toasted muffins. Add toppings.

Sprinkle mozzarella and cheddar over each piece.

Bake for 8–10 minutes or until cheese melts. Broil 1–2 minutes if desired.

Finish with oregano and serve warm.
Notes
You can assemble these ahead and refrigerate or freeze. For freezer storage, bake directly from frozen with a few extra minutes added.
