Description

A warm, melty, customizable breakfast that transforms simple English muffins into mini pizzas loaded with eggs, cheese, and flavorful toppings.


Ingredients

  • 4 English muffins, split

  • 1 tablespoon olive oil

  • 1 cup shredded mozzarella cheese

  • ½ cup shredded cheddar cheese

  • 6 large eggs

  • 3 tablespoons milk

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • 1 tablespoon butter

  • 1 cup diced turkey sausage or turkey bacon

  • ½ cup diced bell peppers

  • ½ cup chopped spinach

  • ¼ cup diced red onion

  • ½ cup sliced mushrooms

  • 1 teaspoon dried oregano


Instructions

  • Preheat oven to 400°F. Arrange English muffins on a baking sheet, brush with olive oil, and toast for 5 minutes.

  • Whisk eggs, milk, salt, and pepper. Scramble in a buttered pan until just set.

  • Spoon eggs onto toasted muffins. Add toppings.

  • Sprinkle mozzarella and cheddar over each piece.

  • Bake for 8–10 minutes or until cheese melts. Broil 1–2 minutes if desired.

  • Finish with oregano and serve warm.

Notes

You can assemble these ahead and refrigerate or freeze. For freezer storage, bake directly from frozen with a few extra minutes added.
