1/2 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese

1 teaspoon lemon zest

1 tablespoon lemon juice

1/2 teaspoon salt, or to taste

1/4 teaspoon black pepper, or to taste

1/4 teaspoon red pepper flakes (optional)

12 ounces fresh or frozen salmon fillets, skin removed

4 cups fresh baby spinach

2 tablespoons chopped fresh parsley (for garnish)
Instructions

Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the rest and set aside.

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Season salmon with salt and black pepper. Cook 3–4 minutes per side until just cooked and flaky. Remove from skillet and set aside.

In the same skillet, melt butter and add remaining olive oil. Sauté onions until translucent, about 3 minutes, then add garlic and cook 30 seconds more.

Reduce heat to low and pour in heavy cream. Stir in Parmesan and mozzarella until melted and smooth. Add lemon zest, lemon juice, salt, pepper, and optional red pepper flakes.

Stir in fresh spinach a handful at a time until wilted.

Add cooked pasta to the skillet, tossing to coat in the creamy sauce. Add reserved pasta water as needed to reach desired consistency.

Break salmon into bite-sized pieces and fold gently into the pasta and sauce.
