Description

This Cheesy Creamy Salmon Spinach Pasta Skillet is the perfect blend of comfort and nutrition.   • 8 ounces penne or fusilli pasta

  • 2 tablespoons unsalted butter

  • 2 tablespoons olive oil

  • 3 cloves garlic, minced

  • 1 small onion, finely chopped

  • 1 cup heavy cream

  • 1/2 cup grated Parmesan cheese

  • 1/2 cup shredded mozzarella cheese

  • 1 teaspoon lemon zest

  • 1 tablespoon lemon juice

  • 1/2 teaspoon salt, or to taste

  • 1/4 teaspoon black pepper, or to taste

  • 1/4 teaspoon red pepper flakes (optional)

  • 12 ounces fresh or frozen salmon fillets, skin removed

  • 4 cups fresh baby spinach

  • 2 tablespoons chopped fresh parsley (for garnish)


Instructions

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the rest and set aside.

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat. Season salmon with salt and black pepper. Cook 3–4 minutes per side until just cooked and flaky. Remove from skillet and set aside.

  • In the same skillet, melt butter and add remaining olive oil. Sauté onions until translucent, about 3 minutes, then add garlic and cook 30 seconds more.

  • Reduce heat to low and pour in heavy cream. Stir in Parmesan and mozzarella until melted and smooth. Add lemon zest, lemon juice, salt, pepper, and optional red pepper flakes.

  • Stir in fresh spinach a handful at a time until wilted.

  • Add cooked pasta to the skillet, tossing to coat in the creamy sauce. Add reserved pasta water as needed to reach desired consistency.

  • Break salmon into bite-sized pieces and fold gently into the pasta and sauce.

  • Remove from heat, garnish with parsley, and serve immediately.

  • Use fresh herbs like parsley or dill for extra flavor and color.

  • Leftovers can be gently reheated with a splash of milk to restore creaminess.

  • Adjust lemon juice and seasoning to taste for a perfect balance of tang and richness.
