  • 1 small green bell pepper, diced

  • 1 small red bell pepper, diced

  • 1 ½ cups cooked turkey sausage or vegetarian sausage crumbles

  • 1 cup low-fat cottage cheese

  • ½ cup sour cream or plain Greek yogurt

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 1 teaspoon garlic powder

  • ½ teaspoon onion powder

  • ½ teaspoon smoked paprika (optional)

  • 2 tablespoons butter or olive oil for sautéing


Instructions

  • Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or cooking spray.

  • Heat butter or olive oil in a skillet over medium heat. Add the chopped onion and diced bell peppers, then sauté for about 5 minutes until soft and fragrant. Remove from heat and set aside.

  • In a large bowl, whisk together eggs, cottage cheese, sour cream, salt, pepper, garlic powder, onion powder, and smoked paprika until well combined.

  • Add hash browns, cooked turkey or vegetarian sausage, sautéed vegetables, cheddar cheese, and mozzarella to the bowl. Stir until everything is evenly mixed.

  • Pour the mixture into the prepared baking dish and spread it evenly with a spatula.

  • Bake uncovered for 40–45 minutes, or until the top is golden and the center is set. A knife inserted in the middle should come out clean.

  • Allow the casserole to rest for about 10 minutes before slicing and serving.

Notes

  • This casserole can be made ahead by assembling it the night before and baking it the next morning.

  • To freeze, cool completely, slice into portions, wrap tightly, and freeze for up to 2 months. Reheat in the oven at 350°F until warm.
