Ingredients

  • 2 pounds potatoes, peeled and diced

  • 3 tablespoons unsalted butter

  • 1 large yellow onion, finely diced

  • 2 celery stalks, finely chopped

  • 4 cloves garlic, minced

  • 3 tablespoons all-purpose flour

  • 4 cups vegetable broth

  • 2 cups whole milk

  • 1 cup heavy cream

  • 2 teaspoons Cajun seasoning (adjust to taste)

  • 1 teaspoon smoked paprika

  • 1 teaspoon salt, or to taste

  • ½ teaspoon black pepper

  • ¼ cup green onions, sliced (for garnish)

  • 2 tablespoons fresh parsley, chopped (optional)


Instructions

  • Melt butter in a large pot over medium heat. Add onion and celery and cook until softened.

  • Stir in garlic, Cajun seasoning, smoked paprika, salt, and black pepper. Cook for 1 minute.

  • Sprinkle flour over the mixture and cook for 2 minutes, stirring constantly.

  • Slowly add vegetable broth, stirring to combine. Add potatoes and bring to a gentle boil.

  • Reduce heat and simmer for 20 to 25 minutes, until potatoes are tender.

  • Partially blend the soup using an immersion blender, leaving some chunks.

  • Stir in milk and heavy cream and simmer for 5 more minutes. Adjust seasoning as needed.

  • Serve hot, garnished with green onions and parsley.

Notes

  • Adjust the Cajun seasoning to control the spice level.

  • For a thicker soup, simmer a few extra minutes after blending.
