4 cups vegetable broth

2 cups whole milk

1 cup heavy cream

2 teaspoons Cajun seasoning (adjust to taste)

Instructions

Melt butter in a large pot over medium heat. Add onion and celery and cook until softened.

Stir in garlic, Cajun seasoning, smoked paprika, salt, and black pepper. Cook for 1 minute.

Sprinkle flour over the mixture and cook for 2 minutes, stirring constantly.

Slowly add vegetable broth, stirring to combine. Add potatoes and bring to a gentle boil.

Reduce heat and simmer for 20 to 25 minutes, until potatoes are tender.

Partially blend the soup using an immersion blender, leaving some chunks.
