Description

A vibrant and flavorful dish combining spiced chicken with fresh seasonal vegetables, perfect for a wholesome and satisfying meal.


Ingredients

4 boneless, skinless chicken breasts (about 680 g)

2 tablespoons olive oil (30 ml)

1 tablespoon Cajun seasoning (15 g)

1 teaspoon paprika (5 g)

1/2 teaspoon garlic powder (2.5 g)

1/2 teaspoon onion powder (2.5 g)

1/2 teaspoon dried thyme (2.5 g)

1/2 teaspoon black pepper (2.5 g)

1/2 teaspoon salt (2.5 g)

1 zucchini, sliced (200 g)

1 yellow squash, sliced (200 g)

1 red bell pepper, sliced (150 g)

1 yellow bell pepper, sliced (150 g)

1 cup cherry tomatoes (150 g)

1 small red onion, sliced (100 g)

2 cloves garlic, minced (6 g)

1 tablespoon olive oil (15 ml)

1/2 teaspoon salt (2.5 g)

1/4 teaspoon black pepper (1 g)


Instructions

Pat chicken dry and coat with spice mixture.

Heat olive oil and sear chicken for 5–6 minutes per side. Remove and set aside.

In the same pan, cook vegetables for 5–7 minutes.

Add garlic and tomatoes, cook briefly.

Return chicken to the pan, cover, and cook 8–10 minutes until done.

Garnish and serve with lemon if desired.

Notes

Adjust Cajun seasoning to control spice level

Use seasonal vegetables for best flavor

Ensure chicken reaches 75°C (165°F) for safe consumption
