  • 4 chicken leg quarters (thigh and drumstick attached)

  • 3 tablespoons olive oil or melted butter

  • 1/3 cup brown sugar, packed

  • 4 garlic cloves, minced

  • 1 teaspoon paprika

  • 1 teaspoon onion powder

  • 1 teaspoon dried thyme (or rosemary)

  • 1/2 teaspoon salt (adjust to taste)

  • 1/2 teaspoon black pepper

  • 1 tablespoon Dijon mustard (optional)

  • 2 tablespoons chicken broth or water


Instructions

  • Preheat oven to 400°F (200°C). Line a baking sheet or roasting pan with parchment paper or lightly grease it with oil.

  • Pat chicken quarters dry with paper towels. Arrange evenly on the prepared baking sheet.

  • In a bowl, mix brown sugar, olive oil, garlic, paprika, onion powder, thyme, salt, and pepper. Stir in Dijon mustard if using.

  • Rub seasoning mixture generously over each chicken quarter, coating both the skin and underneath.

  • Pour chicken broth or water into the bottom of the pan. Roast for 45–55 minutes, until the internal temperature reaches 175°F (79°C) and the skin is golden and caramelized.

  • Remove from the oven and let rest for 5–10 minutes before serving.
