4 chicken leg quarters (thigh and drumstick attached)

3 tablespoons olive oil or melted butter

1/3 cup brown sugar, packed

4 garlic cloves, minced

1 teaspoon paprika

1 teaspoon onion powder

1 teaspoon dried thyme (or rosemary)

1/2 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

1 tablespoon Dijon mustard (optional)

2 tablespoons chicken broth or water

Preheat oven to 400°F (200°C). Line a baking sheet or roasting pan with parchment paper or lightly grease it with oil.

Pat chicken quarters dry with paper towels. Arrange evenly on the prepared baking sheet.

In a bowl, mix brown sugar, olive oil, garlic, paprika, onion powder, thyme, salt, and pepper. Stir in Dijon mustard if using.
