  • 4 large sweet potatoes, peeled and cut into chunks

  • 4 tablespoons unsalted butter

  • 68 fresh sage leaves

  • 1/4 cup milk or cream

  • Salt, to taste

  • Black pepper, to taste

  • 1/4 teaspoon ground nutmeg (optional)

  • 1 tablespoon maple syrup or honey (optional)


Instructions

  • Peel and cut the sweet potatoes into even chunks. Place them in a large pot and cover with water. Add a pinch of salt and bring to a boil over medium-high heat. Reduce heat and simmer 15–20 minutes, until tender.

  • Melt butter in a small skillet over medium heat. Cook until golden brown with a nutty aroma, about 4–5 minutes. Stir occasionally. Add sage leaves and cook 1–2 minutes until crisp. Remove from heat.

  • Drain sweet potatoes and return to the pot. Mash until smooth. Gradually add milk or cream for desired consistency.

  • Pour the browned butter and sage over the mashed sweet potatoes. Stir gently to combine.

  • Season with salt, black pepper, and nutmeg. Add maple syrup or honey if desired. Taste and adjust seasoning.
