  • 4 tablespoons unsalted butter

  • 1 medium onion, finely chopped

  • 2 cloves garlic, minced

  • 1/4 cup all-purpose flour

  • 4 cups vegetable broth

  • 3 cups fresh broccoli florets, chopped

  • 2 cups shredded sharp cheddar cheese

  • 1 cup heavy cream

  • 1 teaspoon Dijon mustard

  • 1/2 teaspoon smoked paprika

  • Salt and black pepper, to taste

  • Optional garnish: chopped chives or parsley


Instructions

  • Wash and chop the broccoli into small florets. Finely chop the onion and mince the garlic.

  • In a large saucepan, melt the butter over medium heat. Add the onion and sauté for 3–4 minutes until soft and translucent. Add the garlic and cook for 1 minute.

  • Sprinkle the flour over the onions and garlic, stirring continuously for 2 minutes to form a roux.

  • Gradually whisk in the vegetable broth and bring the mixture to a gentle boil. Reduce heat to low and add the broccoli. Simmer for 10–12 minutes until tender.

  • Blend the soup using an immersion blender until smooth and creamy, or leave some broccoli pieces for texture.

  • Reduce heat to low, then stir in the shredded cheddar cheese, heavy cream, Dijon mustard, smoked paprika, salt, and black pepper until fully combined.

  • Ladle the soup into small shooter glasses or mini cups. Garnish with chives or parsley and serve warm.

  • For an extra creamy texture, blend until completely smooth.

  • Can be made a day in advance; add cheese and cream when reheating.
