1 medium onion, finely chopped

2 cloves garlic, minced

1/4 cup all-purpose flour

4 cups vegetable broth

3 cups fresh broccoli florets, chopped

2 cups shredded sharp cheddar cheese

1 cup heavy cream

1 teaspoon Dijon mustard

Instructions

Wash and chop the broccoli into small florets. Finely chop the onion and mince the garlic.

In a large saucepan, melt the butter over medium heat. Add the onion and sauté for 3–4 minutes until soft and translucent. Add the garlic and cook for 1 minute.

Sprinkle the flour over the onions and garlic, stirring continuously for 2 minutes to form a roux.

Gradually whisk in the vegetable broth and bring the mixture to a gentle boil. Reduce heat to low and add the broccoli. Simmer for 10–12 minutes until tender.
