Ingredients
-
4 cups mixed greens (spinach, arugula, baby kale)
-
2 large oranges, peeled and segmented
-
1 grapefruit, peeled and segmented
-
2 tangerines, peeled and segmented
-
1/2 cup pomegranate seeds
-
1/4 cup thinly sliced red onion
-
1/4 cup toasted walnuts
-
1/4 cup toasted pecans
-
1/4 cup crumbled feta cheese (optional)
-
2 tablespoons fresh mint leaves, chopped
For the Honey-Citrus Dressing:
-
3 tablespoons extra virgin olive oil
-
2 tablespoons fresh orange juice
-
1 tablespoon fresh lemon juice
-
1 tablespoon honey
-
1 teaspoon Dijon mustard
-
Salt and freshly ground black pepper, to taste
Instructions
-
Rinse and dry the mixed greens, then place them in a large salad bowl.
-
Peel the oranges, grapefruit, and tangerines, removing all white pith, then cut between the membranes to create segments. Collect any juice for the dressing.
-
Add the citrus segments, pomegranate seeds, and red onion to the greens.
-
Sprinkle the toasted walnuts, pecans, and crumbled feta (if using) over the salad. Add chopped mint leaves.
-
In a small bowl, whisk together olive oil, orange juice, lemon juice, honey, Dijon mustard, salt, and pepper. Adjust seasoning to taste.
-
Drizzle the dressing over the salad and toss gently to combine without breaking the citrus segments.
-
Serve immediately for the freshest flavor and best texture.
