Description

A vibrant, refreshing salad that celebrates the bright flavors of winter citrus. Perfect for holiday gatherings, cozy winter lunches, or any time you want a healthy, colorful dish that lifts the spirit. This salad combines juicy oranges, grapefruit, tangerines, crunchy nuts, and a light honey-citrus dressing for a burst of flavor in every bite.


Ingredients

  • 4 cups mixed greens (spinach, arugula, baby kale)

  • 2 large oranges, peeled and segmented

  • 1 grapefruit, peeled and segmented

  • 2 tangerines, peeled and segmented

  • 1/2 cup pomegranate seeds

  • 1/4 cup thinly sliced red onion

  • 1/4 cup toasted walnuts

  • 1/4 cup toasted pecans

  • 1/4 cup crumbled feta cheese (optional)

  • 2 tablespoons fresh mint leaves, chopped

For the Honey-Citrus Dressing:

  • 3 tablespoons extra virgin olive oil

  • 2 tablespoons fresh orange juice

  • 1 tablespoon fresh lemon juice

  • 1 tablespoon honey

  • 1 teaspoon Dijon mustard

  • Salt and freshly ground black pepper, to taste


Instructions

  • Rinse and dry the mixed greens, then place them in a large salad bowl.

  • Peel the oranges, grapefruit, and tangerines, removing all white pith, then cut between the membranes to create segments. Collect any juice for the dressing.

  • Add the citrus segments, pomegranate seeds, and red onion to the greens.

  • Sprinkle the toasted walnuts, pecans, and crumbled feta (if using) over the salad. Add chopped mint leaves.

  • In a small bowl, whisk together olive oil, orange juice, lemon juice, honey, Dijon mustard, salt, and pepper. Adjust seasoning to taste.

  • Drizzle the dressing over the salad and toss gently to combine without breaking the citrus segments.

  • Serve immediately for the freshest flavor and best texture.

Notes

  • You can swap oranges or tangerines for blood oranges or satsumas for a unique flavor and color.

  • Almonds, pistachios, or macadamia nuts can replace walnuts or pecans. Toasting nuts enhances flavor.

  • Prepare dressing and toast nuts ahead; store citrus separately and assemble just before serving.
