A smoky, creamy grilled chicken burrito filled with bold chipotle ranch flavor, hearty rice, beans, and fresh toppings, perfect for satisfying comfort meals.
Ingredients
For the Chicken

500 g chicken breast, boneless and skinless

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon fresh lime juice
For the Chipotle Ranch Sauce

1/2 cup plain yogurt or mayonnaise

1 tablespoon ranch seasoning

1–2 teaspoons chipotle peppers in sauce, finely chopped

1 tablespoon lemon or lime juice
For Assembly

2 cups cooked rice

1 cup black beans, drained and rinsed

1 cup sweet corn
-
1 cup shredded lettuce
-
1 cup shredded cheese

4 large flour tortillas
Instructions

In a bowl, mix olive oil, smoked paprika, cumin, garlic powder, onion powder, salt, pepper, and lime juice. Add chicken and coat well. Marinate for at least 30 minutes.

Preheat a grill or grill pan over medium-high heat. Grill chicken for 5–7 minutes per side until fully cooked. Rest for 5 minutes, then slice.

In a small bowl, combine yogurt or mayonnaise, ranch seasoning, chopped chipotle peppers, and citrus juice. Mix until smooth.

Warm tortillas slightly. Spread chipotle ranch sauce in the center of each tortilla.

Layer rice, black beans, corn, chicken, lettuce, and cheese evenly.

Roll burritos tightly, folding in the sides.

Grill burritos seam-side down for 2–3 minutes per side until golden and crisp.
