A smoky, creamy grilled chicken burrito filled with bold chipotle ranch flavor, hearty rice, beans, and fresh toppings, perfect for satisfying comfort meals.

For the Chicken

  • 500 g chicken breast, boneless and skinless

  • 2 tablespoons olive oil

  • 1 teaspoon smoked paprika

  • 1 teaspoon ground cumin

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 tablespoon fresh lime juice

For the Chipotle Ranch Sauce

  • 1/2 cup plain yogurt or mayonnaise

  • 1 tablespoon ranch seasoning

  • 12 teaspoons chipotle peppers in sauce, finely chopped

  • 1 tablespoon lemon or lime juice

For Assembly

  • 2 cups cooked rice

  • 1 cup black beans, drained and rinsed

  • 1 cup sweet corn

  • 1 cup shredded lettuce

  • 1 cup shredded cheese

  • 4 large flour tortillas


Instructions

  • In a bowl, mix olive oil, smoked paprika, cumin, garlic powder, onion powder, salt, pepper, and lime juice. Add chicken and coat well. Marinate for at least 30 minutes.

  • Preheat a grill or grill pan over medium-high heat. Grill chicken for 5–7 minutes per side until fully cooked. Rest for 5 minutes, then slice.

  • In a small bowl, combine yogurt or mayonnaise, ranch seasoning, chopped chipotle peppers, and citrus juice. Mix until smooth.

  • Warm tortillas slightly. Spread chipotle ranch sauce in the center of each tortilla.

  • Layer rice, black beans, corn, chicken, lettuce, and cheese evenly.

  • Roll burritos tightly, folding in the sides.

  • Grill burritos seam-side down for 2–3 minutes per side until golden and crisp.

Notes

  • Adjust chipotle quantity to control heat level.

  • Burritos can be assembled ahead and grilled just before serving.

  • Use whole wheat tortillas for a heartier texture if desired.
