Ingredients
1.5 to 2 pounds beef tenderloin
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic powder
4 tablespoons unsalted butter, softened
3 cloves garlic, minced
1 tablespoon fresh parsley, finely chopped
1 teaspoon fresh thyme leaves
1 teaspoon fresh rosemary, finely chopped
½ teaspoon salt
1 bunch asparagus, trimmed
1 tablespoon olive oil
½ teaspoon salt
½ teaspoon black pepper
Instructions
Bring beef tenderloin to room temperature for 30 minutes.
Season with olive oil, salt, pepper, and garlic powder.
Sear in a hot skillet for 2–3 minutes per side.
Roast at 400°F (200°C) for 20–30 minutes depending on desired doneness.
Mix butter with garlic and herbs, then chill into a log.
Toss asparagus with oil, salt, and pepper, then roast for 10–15 minutes.
Rest beef for 10–15 minutes before slicing.
Serve with asparagus and top with garlic herb butter.
Notes
Use a meat thermometer for best results.
Let the beef rest before slicing to retain juices.
Garlic herb butter can be made ahead and stored in the fridge.
