Ingredients

Beef (ribeye or sirloin): 1½ pounds (680 g), thinly sliced

Soy sauce: ½ cup (120 ml)

Granulated sugar: 2 tablespoons (25 g)

Brown sugar: 2 tablespoons (30 g)

Asian pear or sweet apple: ½ cup (120 g), grated

Yellow onion: ½ cup (75 g), grated

Garlic: 6 cloves (18 g), minced

Fresh ginger: 1 tablespoon (6 g), grated

Sesame oil: 2 tablespoons (30 ml)

Ground black pepper: ½ teaspoon (1 g)

Neutral cooking oil: 1 tablespoon (15 ml)

Green onions: 3 stalks (45 g), sliced

Sesame seeds: 1 tablespoon (9 g)
Instructions

Thinly slice the beef against the grain and place in a large bowl.

Mix soy sauce, sugars, grated pear, grated onion, garlic, ginger, sesame oil, and black pepper.

Pour marinade over beef and mix well. Refrigerate for at least 1 hour.

Heat a skillet over medium-high heat with cooking oil.

Cook beef in batches for 2–3 minutes per side until caramelized.
