Description

A classic Korean dish featuring thinly sliced beef marinated in a savory-sweet sauce, cooked quickly for tender, caramelized perfection.


Ingredients

  • Beef (ribeye or sirloin): 1½ pounds (680 g), thinly sliced

  • Soy sauce: ½ cup (120 ml)

  • Granulated sugar: 2 tablespoons (25 g)

  • Brown sugar: 2 tablespoons (30 g)

  • Asian pear or sweet apple: ½ cup (120 g), grated

  • Yellow onion: ½ cup (75 g), grated

  • Garlic: 6 cloves (18 g), minced

  • Fresh ginger: 1 tablespoon (6 g), grated

  • Sesame oil: 2 tablespoons (30 ml)

  • Ground black pepper: ½ teaspoon (1 g)

  • Neutral cooking oil: 1 tablespoon (15 ml)

  • Green onions: 3 stalks (45 g), sliced

  • Sesame seeds: 1 tablespoon (9 g)


Instructions

  • Thinly slice the beef against the grain and place in a large bowl.

  • Mix soy sauce, sugars, grated pear, grated onion, garlic, ginger, sesame oil, and black pepper.

  • Pour marinade over beef and mix well. Refrigerate for at least 1 hour.

  • Heat a skillet over medium-high heat with cooking oil.

  • Cook beef in batches for 2–3 minutes per side until caramelized.

  • Garnish with green onions and sesame seeds. Serve hot.

Notes

For best results, marinate the beef for several hours and cook in small batches to achieve proper caramelization.
