Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened

  • 1/2 cup powdered sugar, plus extra for rolling

  • 1 teaspoon pure vanilla extract

  • 1/4 teaspoon almond extract

  • 2 1/4 cups all-purpose flour

  • 1/2 cup finely chopped almonds

  • 1/4 teaspoon salt

Instructions

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.

  • In a large mixing bowl, beat the softened butter and 1/2 cup powdered sugar together until light and fluffy, about 2–3 minutes.

  • Mix in the vanilla and almond extracts until fully incorporated.

  • In a separate bowl, whisk together the flour and salt, then gradually add to the butter mixture on low speed until a dough forms.

  • Fold in the finely chopped almonds gently until evenly distributed.

  • Roll the dough into 1-inch balls and place them about 2 inches apart on the prepared baking sheet.

  • Bake for 12–15 minutes, or until the bottoms are lightly golden. The tops may appear slightly underbaked for a tender texture.

  • Let the cookies cool on the baking sheet for 5 minutes, then roll them in powdered sugar while still warm. Transfer to a wire rack to cool completely and dust with a final layer of powdered sugar.

Notes

  • Store in an airtight container at room temperature for up to a week.

  • Cookies freeze well for up to three months, either baked or unbaked.

  • For variations, try adding chocolate, coconut, lemon zest, or spices like cinnamon or nutmeg.

  • Handle the dough gently to preserve the crumbly, melt-in-your-mouth texture.
